Demi-glace

Here is something that you do not see on the shelves of American grocery stores, demi-glace. Your average American would not even know what is demi-glace. It's amazing how knowledgeable the Japanese are in regards to all things that are culinary, from the different styles and methods of cooking to the classical and modern cakes and breads most, of which, is due to their exposure to the vast array of European style restaurants, patisseries, and boulangeries that exist in Japan. Another aspect is that, their home economics in grade school, which part of their yearly course requirement, covers everything from the syles of cooking from countries like France, Italy, and of course Japanese to the actual methods of cooking and preparation.
